IN A BAKING MOOD?

These cookies are really easy to make, particularly if you have a food processor because it takes the hassle out of creaming the butter and sugar.

After adding the flour and cocoa I found the mixture too dry, so needed to add a bit more melted butter. Probably because I didn't soften it first, but will remember for next time.



CHOCOLATE AFGHANS



Ingredients:
  • 200 g butter
  • 1/2 cup sugar
  • 1 1/4 cups plain baking flour
  • 1/4 cup cocoa
  • 2 cups cornflakes

Chocolate Icing:

1  cup icing sugar
1 heaped tablespoon cocoa powder 
1 tablespoons butter
1/2 teaspoon vanilla extract
2-3 Tablespoons boiling water


Preheat oven to 180 C. Beat butter and sugar until light and fluffy. Sift flour & cocoa. Stir into creamed mixture. Fold in cornflakes. Spoon mounds of mixture onto a greased oven tray, gently pressing each mound together. Bake for 15 minutes or until set. Ice with chocolate icing when cold, decorate with walnut if desired. Makes 20

  1. Hi Yvonne, Thanks for recipe. Our flat oven isnt too good for cake baking, one of them took about 4 hours before its done. Think its a new record. Cookies should be fine hopefully. :)
    Things are a bit busy here, am heading to Wellington mid December. So have to finish a few of my work projects here in the next month or so. Hope all well over there. :) Take care.

  2. Great to catch up again Teo and I hope you enjoyed the cookies. The thermostat is faulty in my oven also, but 4 hours to bake a cake is crazy. Bet it was worth the wait though.

    Are you moving to Wellington or just heading off for a few days? Either way, it's something to look forward to.
